Those who know me ever since I managed a trattoria at Corsignano in theprovince of Siena know my passion for fine food and for the pleasure of the contact with the public, something which has become extremely gratifying for me.
For a certain period of time, a friend had spoken to me about the possibility of reactivating a part of the historic inn at La Villa in the town of Radda in Chianti, one of the rare operations which managed to survive during the most difficult moments of the historic part of Chianti despite the flight from the countryside and from its villages and hamlets. The sharecropping population had departed and new investments were few and far between in this area of rocky soils, difficult to work, one with poor roads and other means of communication.
Hundreds of years hard labor of cannot be cancelled by twenty years of vast social change, and new investments have given renewed life to the territory and attracted a
new class of tourists keenly attracted to the landscape, to the local culture, to the local traditions, and to the possibility of rest and relaxation in a place where every single spot tells marvelous stories of men and women, of cultivators, and of entrepreneurs.
The history of this territory has also handed down a highly varied cuisine, one closely tied to the dishes of the laboring population, capable of transforming simple
ingredients into succulent dishes. And one which reflected the cuisine of the wealthy landowning classes as well.
This is a new adventure which begins in August of 2014, and I am deeply grateful for its realization to Nella Soldani, for her sensibility and willingness to assist in the work of restoring and reconstructing her part of the historic inn.
My interior force and my experience will make me a daily protagonist in the selection of high quality ingredients, in the creation of a typical and carefully prepared
cuisine, in the cordial and friendly service offered to customers, and in a careful choice of wines of quality and good value. The name of the restaurant testifies to this commitment!
For me there is no such thing as a customer, only persons who will become my most welcome guests and, possibly, friends as well.
